Last night I was doing some restaurant menu snooping and got my heart set on pork neck tacos for dinner with greens and pineapple salsa.
Lucky for me Hamish got home and agreed to my wishes.
After eating them I've got to admit, pulled pork would have been so much better but we had nada.

Anyhoo, here is the pineapple salsa recipe. Have it with either the pulled pork or pork neck. We used gluten free white corn tortillas and had them with coriander, iceberg lettuce and a healthy dash of El Yucateco.
1/4 Red Onion
1 Medium Tin Pineapple (If you can get a fresh one use a fresh one, otherwise tinned in NATURAL juices is best)
2 Birdseye Chili
Chop coriander, chili, red onion finely.
Add to pineapple pieces
Dress with the juice of 1/2 a lime
Season to taste
*If you don't like too much heat omit the chili or have less :) :) :)
