After a rather heavy weekend of food and booooze it came to Sunday and I wanted something fresh and light.
It turned out soba noodles were calling my name.
This was delicious and took 20 minutes.
AND I CHEATED.... I used pre made teriyaki sauce.
I'm BAD at making sauces... well, I haven't really tried... but the bottle just looked so easy.
DON'T HATE THE PLAYER HATE THE GAME!!!!!
Make this for lunch or dinner and use different vegetables or make it vegetarian or use salmon or some other fish... I will shut up now.

Soba Noodle Salad
1 pk Organic Soba Noodles, use 1 bunch. (I used the Hakubaku brand it's organic, made in Victoria and easy to find at the supermarket)
1 Chicken breast
Generous handful of snow peas
Enoki Mushrooms
Bottle of store bought Teriyaki sauce... See the picture below, that's the one I bought and it was perfect. shhhhhhshshshshshshsshhhhhh okokokokokok I am a cooking CHEAT but at least I can admit to it hahahahahaa
Cut your chicken up into bite size dices
Pan fry your chicken in a non stick pan with a spray of oil
When browned add a splash of Teriyaki sauce then set aside
In a double boiler bring some water to the boil Add the noodles
Set a timer for 4 minutes
After 1 minute put your snow peas and Enoki mushrooms in to steam
When the 4 minutes is up put aside the mushrooms and snow peas
Drain and rinse the noodles under cold water a couple of times
To assemble the salad pop the noodles onto a plate and top with snow peas, mushrooms, your chicken and some sesame seeds.
YUM YUM YUM!!!!

I love Soba noodle salads...this sounds like a great one, putting it on my list...now. Oh, and I always use bottle marinades - is there any other kind?
