You CAN Make Friends With Salad

Alfalfa/Snow Pea Shoots/ Snow peas/Avocado/Chicken/Grilled Zucchini/Dry Roasted Hazelnuts/Dressed with lemon

Green Beans/Rocket/Figs/Blue Cheese/Dressed with lemon and olive oil

I am friends with Salad.
Lately I've had a penchant for snow peas and alfalfa.
SO
GOOD
:) :) :)

I like to pack every ingredient separately then when I'm at work I mix everything up in a bowl.
If everything is already mixed my theory is the salad goes limp and blergggg... I'm picky, I know.

Someone at work gave me this magazine - THANK YOU KIND PERSON!!!!

What do you take to work for a quick, fresh lunch?
Do you pre mix your salads or make them at work?
Give me your salad recipes!!!

  3. this looks amazing!! One of my goals since going back to uni this week, is to be more creative with my lunches! I usually cook up some brown rice/quinoa etc the night before then in the morning add whatever raw veges i feel like. Grilled zucchini sounds awesome, I'm going to have to steal some ideas :) xx

    1. Miso soup sachets are a great idea, even Miso paste in a tube - perfect. That stuff can be used for dressings too!

  5. I am with you on the separate salad ingredients - pre-mixed salads are gross. I dont bring any to work cos....well...I dont have a reason now I've got a scooter and can bring more stuff with me. AND there's a Coles right near my work (which IS Coles - hurr hurr)...

I'm a fan of salad with: thinly sliced apple, slivered almonds (or any delicious nut), celery, Mersey Valley Bitey Cheddar (that really yummy strong crumbly stuff), butter lettuce and a dressing of lemon, mayo, salt and pepper.

    1. I LOVE grating carrot.. or I have to get hamish to micro julienne it for me.
I'm severely deficient when it comes to chopping carrots.

    1. That's not boring!!!

Boring for me is iceberg lettuce, tomatoes and red onion.

  8. I make my salad in advance, but take the dressing and tomatoes if I'm having them separately. I also put all the ingredients in my salad container with the strongest at the bottom. So for example today my salad container was layered (bottom to top) carrot sticks, cucumber, capsicum, snowpeas, mushrooms, egg, lettuce with the dressing and tomatoes separate. Means that things don't crush each other.

At the moment because of all my gorgeous tomatoes I'm eating a lot of panzella the Italian bread/tomato/basil/cucumber salad.

    1. That layering idea is a good idea!!! I might give it a go, but I'll always leave the tomato separate!

  9. At work we've been obsessed with - baby spinach and rocket, grilled haloumi, baby beets, roasted pine nuts or chick peas, good squeeze of lemon juice, olive oil, salt and pepper!
